ISO 22000:2018 certifies that a factory operates a documented food
safety management system built on hazard analysis and control points,
integrated with HACCP principles. It does not certify that any specific
plate, carton or shipment has been tested. For a tableware manufacturer,
the system covers raw leaf handling, process water, cleaning and
sanitation, in-process control points, batch traceability and corrective
action. The certificate confirms the system exists and is audited, not a
result for the goods in front of you.
ISO 22000:2018, Food safety management systems, requirements for any
organization in the food chain, is a management system standard. It sets
requirements for how an organization plans, runs and improves a system
that controls food safety hazards. It is not a product mark, and it does
not test individual units of output.
That distinction matters more in this category than in most, because
areca leaf tableware is a food contact product made from a raw
agricultural material, the fallen sheath of the areca palm, rather than
a manufactured polymer with a specification sheet. The certificate tells
a buyer that the factory has a defined, audited system for identifying
and controlling hazards in that kind of production. It does not, by
itself, tell the buyer that a particular carton meets any numeric
standard, because ISO 22000 does not set numeric limits for a product
category. Numeric results, where they exist, come from laboratory
testing of specific batches, covered separately.
| What ISO 22000:2018 requires | What it means inside a tableware production line |
|---|---|
| Hazard analysis | Identifying the biological, chemical and physical hazards that can enter at each stage of processing raw leaf sheath into a finished plate or bowl, before deciding how to control them |
| Control points | Defined stages in the process, sorting and cleaning the incoming leaf, heat pressing, cooling, packing, where a specific check is performed and recorded, rather than relying on a single inspection at the end |
| Process water | Water used anywhere it can contact the raw material or finished product must be managed and monitored, not assumed safe because it comes from a normal supply |
| Cleaning regime | A documented and validated cleaning and sanitation schedule for pressing equipment, moulds, conveyors and drying and packing areas, checked against a schedule rather than performed when someone notices a problem |
| Traceability | A batch or lot code that links a finished carton back to the raw material lot, the production date and the shift that ran it, so that if something needs to be traced, it can be traced precisely |
| Corrective action | A documented procedure for what happens when a control point fails: containment of affected product, root cause investigation, and verification that the fix actually worked, rather than a discard-and-move-on response |
A hazard analysis for this material starts before the factory gate.
Areca leaf sheath is collected from the forest floor, which means the
hazard picture includes field-level contamination, moisture content and
foreign matter, before it includes anything about pressing or forming. A
system built to ISO 22000:2018 requires that this upstream stage is
analysed and controlled, not just the pressing and packing stages that
are easier to observe.
Control points follow from the hazard analysis. They are placed where
a hazard can actually be reduced or eliminated, sorting and washing for
foreign matter and surface contamination, heat pressing for microbial
reduction, and cooling and packing for recontamination risk. Monitoring
at each of these points, not only at final inspection, is what the
standard requires and what an auditor checks.
Water enters this process wherever leaf sheath is soaked, washed or
steamed before pressing. Because that water contacts a food contact
product before it is sealed, its quality is a control point rather than
a background utility. Where a factory documents process water against a
drinking water specification, the Bureau of Indian Standards’ IS
10500:2012 sets the relevant Indian benchmark for drinking water,
covering microbiological and chemical parameters against which process
water quality can be assessed and monitored. Citing this standard
supports what the specification covers and its role in assessing water
quality. It does not mean a specific water test result for any given day
is published in this article, and a buyer who wants a current result
should ask for the underlying monitoring record rather than infer
one.
Four things, stated plainly so there is no ambiguity:
It does not test the specific carton in front of you. The certificate
covers the management system, audited on a cycle, not a live guarantee
attached to every unit that leaves the factory on a given day.
It does not set or confirm a numeric hazard limit for this product
category, because ISO 22000 does not publish product specific numeric
limits. Where numeric results exist, they come from a laboratory report
on a specific batch, not from the management system certificate.
It does not replace a batch specific lab report. If a buyer needs
assurance for a particular shipment, the correct document to request is
the microbiological and heavy metals test report for that batch, not the
certificate.
It does not mean failures cannot occur. A certified system is audited
and controlled, which reduces the likelihood and improves the
containment of a failure. It does not make failure impossible, and a
buyer’s own receiving checks remain part of a sound procurement process
regardless of supplier certification.
The value of the certification is that the controls described above
are checked by an independent auditor against a defined standard, on a
recurring cycle, rather than described only by the supplier itself. That
is a meaningfully different level of assurance than an uncertified claim
of good practice. It is not, and should not be presented as, a guarantee
that removes the need for a buyer’s own verification on receipt.
Does ISO 22000 certification mean every plate has been
tested? No. The certification covers the management system,
hazard analysis, control points, monitoring and corrective action,
audited on a recurring cycle. Testing of specific batches is a separate
activity, documented in laboratory reports.
What is a control point in a tableware factory? A
defined stage in production, such as raw leaf sorting, heat pressing or
packing, where a specific check is performed and recorded because that
is where a hazard can actually be reduced or caught.
Does the certification cover process water directly?
It requires that process water is identified as a control point and
monitored. The technical benchmark commonly used for that monitoring in
India is the BIS drinking water specification, IS 10500:2012.
What should I ask for beyond the certificate? The
batch specific laboratory test report for the goods you are buying, and,
if it matters to your approval process, the corrective action record for
any control point relevant to your concern.
Is the certification the same as a food safety guarantee for
a specific shipment? No. It is a certification of the system
that produces the shipment, not a test result for that shipment. For
shipment specific assurance, request the lab report that corresponds to
the batch.
